INGREDIENTS
- 2 oz gin 
- 1 oz lemon juice 
- 1/2 oz honey syrup 
- 1/2 oz egg white 
- 2-3 drops Spring DewDrops bitters 
- Lemon peel and lavender, for garnish 
INSTRUCTIONS
- Add honey syrup, lemon juice, and gin to a cocktail shaker. Carefully separate out the egg white from egg yolk, and add egg white to shaker 
- Dry shake for 25-30 seconds to froth the egg white. Then add ice to the shaker and shake again 
- Strain over a tall coupe glass, letting the drink settle. Add a few drops of Spring DewDrops floral bitters to the egg white foam 
- Garnish with lemon peel and lavender sprig
